1868- In the first stone house built outside the walls of ancient Jerusalem, in the year 1868, is situated the
well known restaurant that bears that name. The house is a well preserved living legacy from the
early days of new Jerusalem outside the walls of the old city– memories and scents,
atmosphere and decoration.
Small societies began to emerge as a new homorganic society with its own unique cuisine– the
cuisine of uprising New Jerusalem. The legend tells that this historic house, owned by the Ben-
Shimon family, is the origin of that cuisine. The family’s mother was already well known for her
cooking all over the city. Thanks to the various influences of the different Jewish origins, her dishes
became even richer and more magical, combining different ingredients and spices. Our own kitchen
followed Mrs. Ben-Shimon and studied the culinary tastes and habits of her times. By mixing old and
new together we created a special cuisine that combines tastes styles and
aromas from different times– hence the modern Jerusalem kitchen, supervised by creative head chef
